We use spontaneous fermentation, so we don't add any yeast. The yeasts present on the fruit and in our workshop take care of that! Our apples are old varieties from the region, "knife" apples rather than cider apples. This gives the cider its own specific characteristics, including acidity and lightness. Fermentation takes place in stainless steel vats. The bubbles settle in bottles.
