Xylitol, birch sugar is a natural sweetener found as a natural sugar alcohol in vegetables, fruits and the bark of the birch tree, among others. Erythritol is well tolerated by the digestive system and is often used in pastry recipes, cold drinks and sweetened products. What's more, erythritol is metabolized independently of insulin, making this sugar substitute suitable for diabetics.

Xylitol is a sweetener with a higher sweetening power than sucrose, while erythritol is slightly less sweet (its sweetness is around 70% compared with other sugars such as coconut sugar). Xylitol tastes similar to sugar, while erythritol has a more neutral, refreshing flavor.
