The gentle smoking of our tofu
In the past, smoking was used to extend the shelf life of foodstuffs. Today, we use this technique because of the aromatic flavor it gives our products. We only use friction smoking, a particularly gentle method. Due to the relatively low temperatures, friction smoking is the least harmful smoking method to your health.
This is how friction smoking works: a metal wheel rubs against a beech log until a temperature of 300°C to 400°C is reached. The smoke produced in this way is conducted into a smoking chamber where it gives our Smoked Tofu and our Tofu Fumesse their characteristic subtle aromatic note. In addition, our friction-smoking equipment operates without any emissions. By the way: in the combustion smokers, traditionally used for sausages, cheese, etc., the temperature can rise up to 800°C.
