The Eryngii mushroom is a particular Oyster mushroom which is also called "Panicot mushroom". It originates from the South of the globe and is particularly popular in Asia (Korea, Japan in particular ....). It is now cultivated in Brussels, so this mushroom has not travelled far to reach us.
The Eryngii has a very good flavour and its fleshy structure makes it an excellent mushroom to eat! It has a very fine, firm yet melting texture that will work wonders on the grill or as a side dish. Also excellent in soups as it is often used in the Japanese tradition.
