Shiitake is the second most cultivated mushroom in the world, with China being the largest producer. But it is also cultivated in Brussels, so this mushroom did not travel many kilometres to reach us!
This mushroom has a sweet and pleasant aroma and remarkable nutritional properties, with a wealth of various B vitamins, vitamin D, iron and potassium. Its main active compound is lentinan, a sugar that is said to have anti-cancer properties. It is often used in the East as a food supplement. Shiitake is said to have strong antioxidant properties, is an excellent source of vitamin D, rich in dietary fibre, vitamins and minerals.
