In the province of Madrid, 13 collectors harvest these pine nuts for us, shelled by their cooperative. Derived from the Parasol Pine, a traditional species of the Mediterranean basin, these pine nuts are lightly brushed to preserve their typical coniferous flavour, and can be incorporated into all culinary preparations, sweet or savoury, and particularly salads or the famous pesto!
